19.2 ounce can, Variant #13, not sure of the age of this. Served in a tulip, the beer pours a slightly hazy gold color with about an inch white head. Head retention and lacing are both good. The brew smells like oak, hay, earthiness, and a bit of citrus. I think the taste is pretty much just like the aroma, but there's also some bretty funk, grainy/wheat malt and apple flavors noticeable too. Nice amount of tartness. Mouthfeel/body is medium, it's easy to drink and has a good amount of carbonation. I thought this was an enjoyable farmhouse ale, certainly worth a try if you've never had it before. I know I wouldn't mind trying this again in the future!

This was poured into a tulip.
The appearance was a semi-murky muddled bronzed copper color. A thin layer of white bubbly head fizzled off. No lace.
The aroma had a fairly large amount of oaky foeder character meshing with some apple cider vinegar and lemon juicy notes. Tart green apples slide in for an extra pizazz and a light Bretty sour to slightly funky arrangement underneath.
The flavor blends the sour to the tart pretty damn good arranging all of those prior mentioned aromas together. Aftertaste was mainly about the apple cider vinegar but with some grassiness.
The mouthfeel was about medium bodied, perhaps a touch under with a good sipping quality about it. Good carbonation. Some harshness strolls in but seemed to be refined by a tickle of the sweet side of the apple cider. Quick tart finish of apple cider vinegar and foeder/woodiness.
Overall, quite a nice tart saison that I would welcome again.

$5.99 @ Roger Wilco, Pennsauken, NJ

Notes via stream of consciousness: Labeled as Variant No. 13 with Ekuanot and Experimental 6300 hops. ALC. 6.6% BY VOL. It's poured a somewhat hazy golden body beneath a short head of white. That's not unusual for a sour beer, nor do I expect it to stay around. The aroma expresses oak, wet straw, damp wood, a hint of leather, and a touch of barnyard - it's Brettanomyces all the way. The flavor is tart but not too tart, not puckeringly sour or anything, and really not overdone with the Brett either. Some basic golden malt comes through, and it's fruity with notes of apple, pear, and a hint of berries. There are some hops present but they're way in the background just giving it a grassy touch. In the mouth it's medium-light on body... perhaps even light-medium, and gently crisp but with a subtle bite of light acidity as well. In the end I was really hoping for more from this, not that it's bad, but I thought the Brett and the oak would be more pronounced. As it is, it's really drinkable and enjoyable but my hopes for something quite special were raised when I read that it was 100% oak foeder and Brett. Still, I think it's worth looking for again as every batch will be a little bit different, and even if the Brett doesn't come on strong at least it's still Brett for those of us who love it.

Everyone must be crazy to think the brett in this beer is timid. I was having heart burn and puckering the whole time! Has a nice barrel wine taste to it with mild spice.

Overall a bit of a chore to finish in a 19 ounce can and super sour. If this is your bag pick one up today!

Poured some of a stovepipe into a DFH tulip. Quickly disappearing foamy white head over a golden wheat body. Tartness of the smell on top of the funk indicated this might be a wee bit different from a normal saison. The sour was repeated in the taste but it also had a nice white wine component to it. Since I was drinking this with a fillet of sole dinner it complimented the fish extremely well. Mouthfeel was zesty and dry.

I'd definitely try this again; maybe with the remaining fillet tomorrow.

Passion + Palate +Patience = Paradox
This formula is how this brewer sums their story. My first formula from a brewer's description of themselves and the first brewer known to me who claims the terroir at 9,000 feet. Could that be a coincidence? I think probably not.
A thoughtful website and a descriptive can and the thin air of 9,000 feet all cause me to give Paradox some Big OA Hugs.

As for Future Knowledge, it is kind of hazy for a saison. (But then, most everything in this ale pushes the envelope.)
Smells are fruity and tart and, then, some herbs kicking up. Tastes are pleasantly tart... and that is not done enough industry wide. Because the tart is controlled, the mouth's response is to savor instead of pucker.
I rarely rate brett-beers above the average, but am glad to do so here because brewer moderation is observed.

Damn I love this beer. Every thing about it. It is on rotation , so when it is available, I make sure to drive up to Divide to enjoy some at the brewery , and then bring some back for later. It's interesting because each batch is slightly different, but there have been very few batches, that I haven't been blown away by. To my this is the Belgian Saison that all other must live up to!.

A: The beer is slightly hazy yellow in color and has a light amount of visible carbonation. It poured with a quarter finger high bright white head that nearly completely faded away, leaving just a narrow collar around the edge of the glass.
S: Faint aromas of funk and sourness are present in the nose.
T: The taste follows the smell and is a little sour with hints of lemony flavors of lactobacillus.
M: It feels light- to medium-bodied on the palate and has a low to moderate amount of carbonation. There is a slight amount of tartness in the mouthfeel.
O: This beer is very easy to drink, but seems like it is a hybrid of a table beer, an American Wild Ale, and a Belgian Saison.

actually this is one of the best paradox beers ive had, and its something really different from them, the process is cool, but the fermentation profile is new from them, its refined beautifully, is bretty and funky and tangy, more intentional than the haphazard overly bacterial weirdness i normally associate with their beers, i hope this is a sign of things to come from them, that old house culture was always a little off to me. this is awesome beer, really pretty in the tulip, creamy white headed and lightly hazy, straw colored, very lively on the carbonation, the head doesnt fade at all. there is an awesome floral character to the nose here, giving it a cool freshness set against the wood and the brett, which are well developed but not overly mature of assertive, which i like in this sort of thing, could be noble hops contributing this element, but im not sure. a light peppery almost belgian note when i taste it, soft wood, white wine, and really farmy brett thats dosed just right, great balance, and cool complexity in a relatively simple palate overall. i love the texture and the brett being there all the way through, uplifted and made light by all this carbonation. easily the best beer i have had from these guys on draft, and a cool new profile on this one. nice!

I recently drank Future Knowledge (the beer kind is the only future knowledge available) a Saison from Paradox Brewery, ABV 6.60%. I thought it was overall pretty good, not the best Saison, but slightly above average.

Look: hazy light yellow with a thin white head

Aroma: lemon, yeast, some brett funk

Taste: It's wheat crackers, tart lemon, and Brett funk, very little bitterness, a bit watery. It is a solid but somewhat plain Saison that is refreshing in the Texas heat.

Feel: light body, easy drinking
