Brewed in collaboration with our good friends and saisonniers at Afterthought Brewing. Our shared love for farmhouse brewing led us to this round, flavorful and satisfying ale. Utilizing a saison strain from a particular region in Belgium, we built this recipe with a modest amount of malted spelt in homage to beers made in this place. Fermented warm to encourage ester production and hopped mildly with old world hops for a balanced bitterness, this beer stands on its own. Malt derived aromas from rich spelt canvas the glass, reminiscent of your kitchen during that sourdough phase you were in three years ago. Dried meyer lemon peel flavors brighten up the banquet, while a sought after minerality finishes the palate in this belgian-inspired local collab.

One of the good things about Poo-Bahs being able to add a beer and a description now is that I don't have to critique the beer, just how the brewer's description matches up to what is in my glass. In this case, Penrose's description is pretty close, even its evocation of "sourdough" is cool. In truth, Penrose's description has the right balance as does the ale.
Bought this from The Beer Temple and poured into the Fantome cylinder used to promote Fantome's saisons. The bottle's label has good Looks also and this saison keeps its foam OK. Smells offer lemon and cider and I can imagine their is spelt in the malt. Tastes are nicely balanced with tart to begin and semi-dry hops to finish. Cleansing to my palate while eating a lunch composed of a Southwest veggie burger on an everything bagel slopped with an artichoke/spinach spread... with some honey BBQ on the side for the bit of burger that wouldn't fit into the bagel. An excellent pairing; indicating that Penrose captured the essence of the saison as a table ale.
I like that Penrose collabed with Afterthought (whose tart I've shied away from for at least a couple of years.) But Penrose managed to keep the tart within bounds. I particularly like how they evoked provincial saisons and gave it a Chicagoland twist. I now should pay more attention to both micros.
10/2/23 Finished the bottle at dinner with the same bagel burger (veggie) as lunch. And taste-tested against Will Be from Is/Was (a purveyor of tart who also has figured it out differently: by adding Brett to some bottles but not others and labeling as such.) Surprising me, Penrose won.
