A Coeur de Cuvée is the “Heart of the Blend.” For us, you could say that Oude Fermier, Oude du Blé and Oude La Ruche all fall into this category of Coeur de Cuvée. So, why the new beer? When we sit down to blend Tête we pull all of the samples from barrels that are candidates. This year, we found 7 separate barrels/puncheons that "could" make their way into the Tête blend. After blending for most of the day, we picked a ratio that only included 3 of the candidates. So what do we do with the other barrels? These are the best of our barrel stock, so I wanted to figure out a way to also showcase them! They are of the same quality of Tête and Oude, they just weren't chosen for the blend - so Coeur de Cuvée was born.
For Blend #1, we took 4 small wine barrels that were earmarked for Tête or Oude Fermier and after not selecting them for Tête de Cuvée Vintage 2016, we added Passion Fruit to them and let them referment. We ended up bottling this beer back in May of 2019 and have been letting it rest as we do with Oude Fermier and Tête de Cuvée until it's ready for you.

poured from a 750mL bottle into a taster glass. pours hazy light orange with a good amount of white foam. smells of musty oak barrel, barn funk, slight tropical fruit. incredible nose in which i thought the fruit would dominate but the funk and barrel run the show. taste is a delightful blend of funk, oak, white wine and subtle passionfruit with a slight acidic sourness on the finish. full mouthfeel with a perfect carb. this is one magnificent saison. the passionfruit is there but it doesn’t dominate. extremely well balanced and not overly sour.
