We Are You started as a group collaboration with some of our best friends - Tim Clifford and Adair Paterno of Sante Adairius Rustic Ales, Jean Broillet of Tired Hands Brewing Company and Brad Clark of Private Press Brewing (of Jackie O's back when this collaboration first started). In February of 2019, we had our friends here to brew this barrel-fermented Saison which includes pieces of all of our breweries. It's amazing that even though our mixed culture is so robust and strong, that by adding bugs from each brewery on brewday, how influential they became in the final expression of this barrel-fermented Saison. We let this Saison rest in oak for 12 months before bottling it up and giving it a couple of months to rest before sharing it with you.

750 mL bottle. Slightly cloudy golden. Smells of white wine, oak, light stone fruity acidity. Tastes quite tart. Stone fruity sourness, white wine, oak. Lingering acidity. Medium body. Pleasant, if a touch too sour to be complex or really good.

I expected funky brett aromas of wet basement and horsey goodness, but instead it’s very tart and vinous. Like an oaky Chardonnay, with a buttery, lemony, acidic finish. It’s a good beer, but I wish the bretty funk would have played a more prominent role.

poured from a 750mL bottle into a side project stemmed bulb glass. pours a hazy yellow with tons of fluffy white head. smells of oak, white wine, barn funk. almost has a lambic-like nose to it. taste is lemony funk, grass, wet oak, white wine. it’s delightfully citrusy, pleasantly tart and complex. mouthfeel is full, quite well carbonated and refreshing. overall, really excellent collaboration saison here. not overly sour, fairly wine barrel forward. it’s clean and very enjoyable. i’ve yet to try any of the previous blends, but this is one of the better collaborative SP beers i’ve had.
