Oak-aged Missouri saison with blackberries and Chamomile tea.
Provence is a series of Missouri beers that are inspired by the saisons of Belgium and France. Each beer in this series will feature a soft addition of a hop, a fruit or a tea.
For this latest iteration of Provence, we took an experimental saison in which we fermented it in a Missouri oak foedre, but blended in not only our cultures, but also those from Casey Brewing & Blending and some new Brettanomyces strains. The result is a touch spicier, a little funkier and somewhat hoppier than a traditional Side Project saison. We then finished this new saison on a thoughtful amount of Oregon blackberries and an assertive dose of Chamomile from our friends at Big Heart Tea Company. The result is a fantastic and complex saison that can be enjoyed now or with some age.

375 mL bottle. Pours a murky red. Smells of earthy yeast and blackberry. Tastes of blackberry up front with a moderate to strong lemon sourness. Basement funky yeast. Finishes with chamomile, which is herbal with hints of apple. Medium light. Pretty nice. It's close to too sour, but not quite there.

Appearance is a beautiful garnet with a well suspended haze that brings the color to near purple. Its tall off-white to pastel pink foam head slowly settles to a lumpy bubbly blanket clinging in meringue peaks leaving wavy arms of lace.
Smell is prickly almost spicy sour blackberry at first whiff, which is then enveloped by a uniquely soft yet dominant barnyard funk before fading back into a spiced marzipan sort of cherry pie you might find in a Belgian kriek, becoming less spicy sharp as the head recedes.
The interplay between the chamomile and blackberry seems to be what's causing me to think of kriek, which is happening on the palate as well. While I'm a little disappointed that I honestly can't pick out the tea or the blackberry individually, they come together so well in that cinnamon spiced cherry pie and marzipan character that it's enjoyable enough for me to go with it.
The medium body is ultra fluffy with a moderate acidity that thankfully finishes just dry, clean, and a little saliva inducing, becoming a little more acidic over the session.

poured from a 750mL into a snifter. pours a light purple with a light pink foam head. spicy, herbal tea, blackberry jam and light oak. maybe even a touch of grape. taste has strong herbal tea backed with a jammy blackberry pie (crust and everything). medium-full mouthfeel. it’s a light light on the mouthfeel but soft and approachable. probably my favorite provence since cup of love.
