Oude Fermier from Pinot Noir puncheons

Coeur de Cuvée is a series of blends of some of our finest wine barrel-fermented and aged saisons. This sixth release contains select Pinot Noir puncheons of Oude Fermier, each of which was barrel-fermented and aged for 14 months before blending and being naturally conditioned in this bottle.

Pours orange with a light haze to the translucency. Head is a couple fingers of white foam.

Aroma is green grapes, pear, lemon zest, and apple cider vinegar. Very light tart funk just behind those notes, with oak, stone, and faint grassy hops soaking up the funk to bring it to a close. Oak really grows as the beer warms, becoming a common theme throughout the beer.

Flavor profile has a dynamic funkiness to it, escalating and tapering off just like a standard bell curve. Notes of green grapes, white wine, and green apple open things up, with oak, grassy hops, apple cider vinegar, light straw, and some residual sugar drawing it to a close. The sugar the end drops off as the beer warms out of fridge temperature. The funkiness is just engaging enough to accentuate the whole profile, without bringing a jaw tightening sourness. Acidity is very mild at the onset, but does build slightly towards the finish, finalizing at a medium. That acidity is accented by a build up apple cider vinegar at close. As the beer warms up, oak is accentuated throughout the profile, adding a little further tart tanginess to every sip.

Mouth feel is a boiled, still texture with a very soft and thin effervescence. The effervescence builds and swells up towards the end, akin to a thin champagne. Thickness is medium. Together, it makes for a very mild drinking saison in terms of texture. It's flowy, without being showy or bold.

Overall, complexities are present, and nuanced throughout this beer. It drinks with intrigue, bringing with it a refreshing, thoughtful saison.

Served in a 15.5oz Spiegelau tulip from a 750mL bottle.

750 mL bottle. Clear golden. Smells of lemon and grass notes. Hints of vinegar. Earthy basement yeast. Tastes of stone fruit, grain, oak, with a slight vinegar acidity in the finish. Lots of wine with deep earthy notes. It's a little bit vinegary, but the sourness isn't too strong. It's not bad, but not my favorite.

I’ve only had blends 4 and 5 but this is tops. That rich straw and damp oak, crisp citrus that I’ve come to expect from Side Project. The pinot noir adds quite a bit of complexity, nice subtle fruit and mostly skin. Medium body and carb.

Poured from a bottle into a small stemmed glass

L: fairly turbid orange gold. Nice white head, maybe slightly off white. Lovely constant carbonation, very champagne-esque. Some tight, nice lacing left with each sip

S: slight bit of funk, smidge tart. Get Granny Smith apples, hay, Chardonnay grapes, lemon flesh, orange zest. Great balanced acidity. Quite fruit forward, almost tropical? Like some pineapple or something. Nice oaky character as well

T: a nice sip - quite lambic like, surpassingly. There’s more funk on the swallow than the nose suggested. Fruit forward: apple, green grapes, lemon. A little bit of hay, grassy. Flavor is a bit sharper than the nose - not bad, but I liked the more rounded, full character suggested by the aroma. Loses most of that tropical character I got on the nose as well. Medium+ finish, nice tart funk that lingers for a good amount of time

F: Medium- body, medium+ carbonation. Nice acidity, a little sharp at first but overall well balanced - slightly drying

O: a very solid beer, but the delta between aroma and swallow prevents me from loving it. Separately they’re great, together is makes for a (delicious) bait and switch. Regardless, happy to drink it and certainly would again

Bottle. Blend 6. Cloudy burnt golden color.

A little tart, but very wine forward. White grapes and big wine barrel influence. Saison notes are nice and balanced. Green apples. Fruity esters. Definitely one of the more barrel flavored saisons I’ve had. Very complex and very drinkable.

#WickedBeerSideProjectShare2021. Bitter, yeasty, dry. More punchy than most SP Saisons I’ve tried. Some restrained funk, but overall a bright profile that finishes clean & oaky.

poured from a 750mL bottle into a SP stemmed bulb glass. pours a darker (murkier) blonde with pockets of amber and nearly three fingers of fluffy white head. oak, funk, must and a touch of red wine on the nose. taste follows with a low level of acidity. maybe a touch of green apples. this packs a much higher funk than SdF pinot. the funk and musty oak give it a more complex flavor profile. incredibly full mouthfeel with a nice, lower (softer) level of carbonation. drinks so easily and elegantly. i’m a huge fan of SdF pinot and while that beer a little more crushable than this one, it works here as it finds itself more of a slow sipper which one can enjoy over an hour or so while allowing the beer to really open up. tasty as hell. hope we get to see this one again in the future as a part of SP’s core lineup.
