Coeur de Cuvée is a series of blends of some of our finest wine barrel fermented and aged saisons. Inspired by the wines of Chablis, Blend #7 focuses on blending one of our most delicate saisons with a minimal oak influence to allow the flinty, minerality to showcase the extended aging in bottle before being shared with you.

Lightly hazy burnt orange with a short white head that leaves tons of lacing on the glass.

Classic Side Project wild, it's a little higher in acid, but also pleasantly herbal, minty and frothy.

Beautifully light, dry, and citrusy. Subtle funk on the nose, with the oak barrel showcasing really nicely. Finishes light, with mild Bleu cheese notes on the finish. One of my favorites from this series.

750 ml bottle, poured into a tulip at ~40 degrees F.

L: Pours a clear bright straw gold at first, then becomes quite hazy and opaque by the end. Forms a finger or so of short-lived white head.

S: An almost riesling-like white wine, with notes of green apple, pear, soft mild funk, and a slight tinge of minerality.

T: Follows the nose rather well, actually - this opens with rather riesling notes, buoyed along with tart green apple and just underripe pear. Tall grasses and a soft herbaceousness manifest as it moves along, with some distant tones of old, weathered wood and mildew - essence of fallen log, as it were. A tinge of minerality rounds out the finish.

F: Light and rather lively.

O: A delight, but hey, it's a Side Project saison.

Pours a hazy pale yellow-orange with a couple fingers of fluffy white foam. The final ounces of the bottle drop enough protein into the beer to turn the transparency from hazy to heavy foggy. Aroma is green apples, pear, white wine, and stone. Acidity is very light. Some light yeast spice adds a little zesty feature right before close. Finish is dry, clearing out any lingering notes. Flavor profile is green apple, green grapes, stone, and light grassy, herbal hops. It has a little green apple tartness at the onset, which smooths out with grassy, herbaly hops. Really great transition. Very minor yeast spiciness at the back adds a little further elevation, but it's subtle. The start is a little funky tart, with the finish leaning towards sweetness, that is, before the dryness sweeps in and shuts the door on any lingering notes. Acidity remains very mild. Mouth feel is a soft crispness, with a medium thickness. It threads the needle between 'crisp' and 'comforting' very well, drinking both crushable, and thought-provoking. Overall, this saison packs it all in to one refreshing package. Tart, plump, soft, funky, and dry.

Served in a 15.5oz Spiegelau tulip from a 750mL bottle. Blend #7.

poured from a 750mL bottle into a snifter. pours a hazy bright orange with a two fingers of fluffy white head. foam recedes forming a soapy white collar around the glass. a few white swirls remain. musty oak, funk, grass, hay all on the nose. maybe a bit of lemon too. taste has a pleasant mineral quality too it as well as a nice lemony tartness to it. medium full mouthfeel with a spritzy carbonation. really good and interesting entry in this series. not at all sour and really easy drinking.
