Coeur de Cuvée is a series of blends of some of our finest wine barrel fermented and aged Saisons. This eighth release contains select barrels of a Chablis-inspired Saison which was then refermented on Michigan Pears before being blended in a Bière de Coupage style and conditioned for an extended period of time in bottle before being shared with you.

Pours orange with a steady fog to the translucency. Head is two fingers of white foam. Aroma is very mild and delicate citrus, paired alongside oak, lemon grass, stone, and grassy hops. Fairly dainty, with a mild acidic start. Balance is good. Flavor profile is a similar storyline, bringing lemon zest, alongside grassy hops, a squeeze of citrus, stone, and oak. As a whole, it leans tart with a mild acidity, drying up slightly at the end. Dynamics are smooth, flowing from start to finish. Mouth feel is medium in thickness with a soft, consistent effervescence. Overall, pairing the light tartness up with the faint citrus sweetness works out well here. Really fun and intriguing to sip on, with the biggest danger being that the sips turn into gulps rather quickly.

Poured at fridge temp. Pours an opaque orange with white head. Nose is sour, funk, lemon. Taste is lemon, vanilla, candy, pear, cherry, funk. This is quite sour! Great overall.

This one pours a golden yellow color, with a small head, and lots of lacing.
This smells like very tart pear, lemon peel, white wine, and grassy funk.

750 mL bottle. Hazy yellow. Smells of pears, wheat, lemon, white wine. Tastes of bright white wine, cidery notes, pear, tart up front, but dies down. Grainy back end and mineral finish. Medium body. Bright, tart, fruity, winey, and overall very pleasant.

poured from a 750mL bottle into a SP stemmed bulb glass. pours a semi hazy orange with a finger of fluffy white foam that reduces down to nothing in an instant. tart pear and even fleshy peach on the nose with a touch of oak and some mustiness. taste follows and the fruit aspect is like somewhere between PdF, AdF and Fuzzy. pear has always been a more subtle flavor to me. very watered down. but this is slight tart with some stone fruit qualities. medium-full mouthfeel that drinks somewhere between beer and a semi-dry white wine. this was excellent. delicate in both the base beer and the fruit. fairly complex and not overly sour. nice CdC addition.

This is exceptional. I love the Chablis influence; lots of tart citrus, pear, and a touch of salinity with medium acid. Slight musty tartness that’s more detectable on the nose. This one’s juicy & refreshing, while still being slightly dry and puckering.

Look - bright golden yellow with a slight haze and a slight white head and initial rimming slight lacing
Smell - tart oak citrus pear
Taste - nice pear tart with a really nice oakiness to it
