67 Old Fashioned

Crafted at Henry’s Majestic in Dallas, Texas
At Henry’s Majestic, we use ingredients in unexpected ways. Anybody can put beer in a cocktail, but we wanted to do something different. The idea for the 67 Old Fashioned came while having a beer and a shot after work. A sip of the cocktail is very whiskey forward, but when you exhale you taste the Mosaic hops and the gentle IPA bite from the demerara syrup made with Dallas-based Community Beer Co.’s IPA.
1/4 oz Community Mosaic IPA demerara syrup
2 oz High West Double Rye
3 dashes Angostura bitters
1 orange peel
1 lemon peel
Place the orange and lemon peels in the bottom of an Old Fashioned glass and press gently with a muddler. Add whiskey, syrup and bitters. Place ice in glass and stir until the glass starts to “sweat.”
IPA Demerara Syrup Instructions:
2 part brown sugar
1 part Community Mosaic IPA (or another IPA, like Victory DirtWolf or Toppling Goliath Sosus)
Place ingredients in a medium saucepan. Heat on low until sugar dissolves and syrup begins to thicken. Let cool to room temperature and transfer to a sealed jar. Keeps up to two weeks in the refrigerator. ■
