I was looking for a way to use Root, an 80-proof liqueur made with wild roots and herbs that tastes amazingly like root beer. Why not make a root beer float? We add a touch of maple syrup for earthy sweetness, egg white for creamy texture, and top with a dark beer. The beer adds a soft carbonation and the hops balance the flavors nicely.
2 oz Root
1 oz egg white (1 oz = the white from one egg)
1 barspoon maple syrup
Top with Otter Creek Stovepipe Porter (also delicious with a Black IPA, such as 21st Amendment Back in Black IPA)
In a mixing glass, combine Root, egg white and maple syrup. Add ice and shake vigorously. Fine strain into a highball glass and top with beer. ■
