Stout & Stormy

We were tinkering around with a house version of a Dark & Stormy in the bar and happened to have a bottle of Ninkasi Oatis within reach. A healthy dose of the roasty Oatmeal Stout proved to be the perfect visual and flavorful companion, adding a nutty, rich complexity to this still-refreshing patio classic.

1 1/2 oz dark rum
3/4 oz fresh-squeezed lime juice
1/3 oz ginger simple syrup
2 oz ginger beer (we use Cock & Bull)
3/4 oz Ninkasi Oatis (or any flavorful Oatmeal Stout, like Firestone Walker’s Velvet Merlin or Southern Tier’s Oat)

Build in a Collins glass by first adding the non-carbonated ingredients and giving it a quick stir with your barspoon to combine. Fill the glass most of the way with chipped ice (or with 3 medium hand-formed cubes), then add the ginger beer, leaving some space at the top of the glass. Top with the Oatis for a lovely, cascading “storm” effect. Garnish with a lime wedge.
