Clear and bubbly pale golden body with a white cap. Aromas of tart oak, lemon, light grains, wild yeast with supporting flowers, brett, and funk. Taste is mostly as the nose foretold but with a honey note in the middle of it all and exterior orange zest. A bright, elevated, appropriately tart feel, but higher carbonation holds it back form being a true delicate beauty. Great debut

6oz pour from a bottle at St Gambrinus Bottle Shoppe in Brooklyn. Served in a little wine glass.
Pours a clear, dark yellow, with only a little head and only a little carbonation. Smell is tart, oaky, lemon, very nice.
Taste is tart with a fair amount of funk, some oak, maybe a peach or apricot tartness.
Mouthfeel is smooth, slightly slick. Overall, this is a pretty good beer.

Pours a cloudy yellow gold color with a finger of frothy white head. Moderate head retention. Leaves a crown of lacing around the top of the glass.
Aromas of pear and green apple, as well as grainy malts, wheat, lemon zest, dandelions, funk, musty oak, and faint vanilla.
The flavor is full of vinous white wine grape notes, light vinegar, green apples, lemon and orange zest, damp hay, oak, grainy malts, vanilla, honey, and light funk. Nicely complex.
The feel is medium-light bodied with pretty good carbonation. Bright and crisp with a dry finish.
Overall, this is a fantastic farmhouse ale. It's very complex, earthy, floral and lightly acidic with a subtle funkiness. Not to mention drinkable as hell.

10/20 bottle from the brewery in Livingston NY. Pours a clear straw yellow with a finger of rocky white head that dissipates, nice lacing, smell is funky sweet wheat bread, tart green apple flesh, white wine must, grassy hops and lemon pith, hints of honey and rose, taste is cracker malts, floral white wine, mildly bitter grass on the finish, hints of lemon and hay funk, feel is light, bright carbonation, mild acidity, dry finish. If you could bottle up a meadow this might be it, and for some reason the Big Rock Candy Mountain plays in my head as I drink this. Yum.

750 mL bottle. Clear golden. Smells of oak, white wine, light grape acidity, and some faint fruity notes. Tastes of much stronger oak, grain, lightly earthy hops, sweet grape juice, a touch of bright, fruity tartness, and a lingering white wine flavor. I feel like it deserves a fancy fruit descriptor, like lychee, but that would be me making up flavors I can't actually taste. Light, crisp, subtle, but expresses all aspects of its flavor profile, at least that I can discern. I think this is remarkable and no one I'm sharing it with seems to agree.

candied lemon, bready, earthy minerality, slightly floral, oaky qualities and vanilla. this one is quite delicate, restrained even. but the lemon an mineral flavors dancing with some oak complexity keeps it interesting, very nice!

Poured from a bottle (Dec19) into a Belgian glass
L: cloudy light yellow/gold, thick white head with matching lacing. Head sticks around for several minutes, lacing as well
S: light farmhouse aroma - floral and herbal, some citrus/lemon zest. Bit of light bread/dough
T: minimal funk (there is some) but a very nice acidic taste off the bat. Get that lemon zest note mostly, followed by dough with some oak as well. Medium finish, flavorful throughout
F: medium carbonation and mouthfeel, effervescent, easy drinking. Great job coating the mouth, thirst quenching
O: a delicious saison, full of flavor with great balance. Flows very well from aroma to swallow, while there isn't a singular "wow" aspect the way this beer drinks overall is something special

Really just a phenomenal beer. Excellent head production, and nearly an hour later there's still 1/8 of an inch clinging to life atop a hazy, lemon-yellow body.
Nose is primarily rustic and funky, with minor parts sour and lemon citrus. Oak manages to peak through here and there. So much more aromatic than any 5% ABV brew has any right.
Palate expression is similar. It's primarily a rustic, moderately funky saison, with a touch of sourness, moderate oak, and just lovely balance. An exceptional brew through and through.

The beer pours a nice bright golden straw color, fairly cloudy with a nice foamy white head, about two fingers tall with excellent retention and lacing. The aroma is very enticing, soft funk, light mineral water, a touch of acidity with some citrus peel while there is a lovely floral bouquet, soft fruitiness and a nice doughy pale malt backbone. The flavors are great, delicate funk, light green apple with dry leaves, musty oak, with a very bright wildflower character, lemon peel, with a touch of berry and mineral water and a soft doughy finish. The mouthfeel is pleasant, very lively and vibrant with a medium body that is highly carbonated but coats nicely and finishes with a tart and dry kick that is quite crisp.
Verdict: A great Saison from Suarez Family Brewery. Bright, delicate, complex, lively and very balanced and refreshing. The oakiness of the beer is fairly subdued but does draw out some more nuanced flavors which enhances the saison experience.
