Insight Cellars Blending & Brewing is our celebration of the art, science and passion of beer making, driven by our deep understanding and appreciation of wild fermentation. We craft premium quality beers drawing inspiration from the world's venerated fermentation traditions, while also exploring the boundaries between beer and wine and pushing the limits of what beer can be.
The heart of Insight Cellars is in our oak-aged, spontaneously fermented wild ales and mixed fermentation saisons, crafted from a house yeast culture that has been collected, isolated and refined over time from wild strains native to Refshaleøen on the Copenhagen harbor. The resulting beers are highly complex, multidimensional and entirely distinctive to the location where they were born. The original art-forward labels are designed to reflect the artfully crafted products inside the bottle.
Following a methodical tasting and blending process, our beers are either bottled as they are to let the wild fermentation and barrel-aged character shine, or enhanced with luxurious and unexpected flavor additions such as fresh fruit, foraged herbs, vanilla, and house-made noyaux. We also work extensively with wine grapes to create unique hybrids that embody the best qualities of both beer and wine.
